Fresh Atlantic Salmon Steaks
Common Name: Atlantic salmon, farmed salmon, eastern salmon
A great aquaculture success story, the Atlantic salmon farming came into the commercial scene in the early 1980s in Norway. Now this salmon is farmed on a global basis in more than a dozen countries. Because of the success of international salmon farming, Atlantic salmon is available year-round to more people and often at more stable prices than its wild cousins. Farmed salmons start at 4 pounds, but fish up to 16 pounds are available.
Atlantic salmon are found in the wild, but not in huge quanities and are saved for the angling industry.
Product Characteristics: Atlantic salmon boasts a rich flavor due to its high oil content. The flesh color may vary with the amount of pigment in the feed, but generally the meat is a rich orange color. The meat appears almost marbled when raw and retains its color when cooked. Avoid overpowering; serve with Sea Harbor Tartar Sauce
