| Three Citrus Alaska Sole
THREE CITRUS ALASKA SOLE
Cooking Time: 5-6 minutes
· 4 (6 oz each) Sole Fillets, thawed if necessary
· 1/4 cup Butter or Margarine, melted
· 1/4 cup Lemon Juice
· 1/4 cup Italian Parsley, chopped
· Salt and White Pepper, to taste
· * Three-Citrus Beurre Blanc Sauce
For each serving: Place one Sole Fillet on baking sheet. Brush with 1 tsp. each, butter and lemon juice. Broil 5-6 " from heat sauce until fish flakes easily. Sprinkle with 1 tsp. parsley; season with salt and pepper. Plate fillet; top with 2½ Tbsp. Three-Citrus Beurre Blanc Sauce.
* Three-Citrus Beurre Blanc Sauce
· 1/2 cups Orange Juice
· 1/4 cups Shallots, minced
· 3/4 tsp. Lemon Zest, grated
· 1/2 tsp. Lime Zest, grated
· 6 Tbsp. Unsalted Butter, room temperature
· Salt and White Pepper - to taste In saucepan, combine juice, shallots, and zests over medium-high heat; reduce by half. Remove from heat. Whisk in butter; season with salt and pepper. Set aside; keep warm.
